What we do

Bakery & Market

Our pastry program is driven by our simple philosophy, not sugar. We love assertive flavors that are unexpected and ethereal — like candied grapefruit, green cardamon and sweet almonds.

Our lunch offerings include tarte flambe with parsnips and creme fraiche or a cup of 291 whiskey lemon parmesan broth. In the evening, stop in and pick up bay leaf roasted chickens, grilled branzino, or slow braised lamb ribs. No need to worry or cook, we do it for you.

In-House Dining

In the early morning hours before you’ve left the comfort of your bed, our barista is dripping the first coffee and fresh juices are being pressed. By noon, the entire space is filled with the smell of fresh breads and the kitchen is braising and roasting fine foods.

At night, the energy picks up a beat as the sun goes down and the Denver skyline starts to glow with the city lights. Smoked rabbit, stinging nettles and hen of the wood mushrooms are prepared with the innate passion for what we enjoy doing most, cooking for you.

Specialty Catering

It’s your special moment. You shouldn’t have to choose from a menu but have one designed for you. We bring our restaurant to you for a one of a kind, once in a lifetime experience.

For your office, we will bring breakfast and lunch directly to your door. Order some of our delicious pastries to start the day or bring in fresh sandwiches and salads for your office meeting.

Linda Hampsten Fox

Owner/Chef

Linda is the creative force behind The Bindery. Her cuisine displays a beautiful, casual rusticity, both modest and edgy. Linda is assertive and clever in her culinary skills which speaks to years of experience as a chef and premier caterer. Her deep understanding of authenticity around food lends itself to The Bindery’s spirited cooking and focused kitchen.

Jake Riley

Executive Chef

Yes we have a butcher in the house who is also a talented chef. Jake’s extensive culinary training is invaluable and he has been working alongside Linda throughout most of his career. As executive chef, Jake’s skill set, leadership and “let’s do it” personality backs up Linda’s aspirations and is a strong foundation for the entire team at The Bindery.

Zachary Sanders

General Manager

Over the last ten years Zac has been cultivating this zeal for hospitality, as well as an appreciation for all aspects of the dining business. As general manager Zac strives to cultivate an atmosphere of service that mirrors the finesse of The Bindery’s ingredient-driven menu and complimenting beverage program.
